My vegetable soup usually has whatever's left in my fridge, usually centering on tomatoes. It's probably the healthiest and cheap recipe listed while still tasting damn good.
Ingredients
1 Onion
4 Medium Carrots
4 Stalks of Celery
4 Cloves of Garlic
1 Can Tomato Paste
1 Can Beans
1 Can Tomatoes
3 Cups Water
1/4 Head of Cabbage
3 Medium Sized Potatoes
Rosemary to taste
Clilanto to taste
Balsamic vinegar to taste
Instructions
Put a pot on medium/low heat and line with olive oil. Add onion, carrots, celery, and 2 cloves of garlic.
Steam contents for 7 minutes. Mix with half of the tomato paste.
Add in water, beans, tomatoes, remaining tomato paste, and seasonings. Boil contents for at least 20 minutes
Cut cabbage into thin ribbons
Peel potatoes and cut into 1 cm cubes.
Add cabbage and potatoes into pot. Add in extra water if necessary and boil until potatoes are tender(~15 minutes)
