Spam Fried Rice was the first major meal I ever actually cooked for myself in college. Perhaps not the most healthy option, but it's a reliably tasty dish that always makes me a bit nostlagic.
Ingredients
1 Cup Soy Sauce(Just enough to cover the Spam while marinading)
Apple Cider Vinegar to Taste
One dash sugar
Red Pepper to Taste
1 Can Spam
One half head green cabbage
1 Onion
About 4 Medium Sized Carrots
About 4 Stalks of Celery
4 Cloves of Garlic
2 Eggs
1 Cup Dry Rice
Instructions
The day before, make one cup of dried rice(I normally use basmati but most rice varieties should work)
Make a marinade by mixing soy sauce, vinegar, and sugar in a bowl.
Cut spam into thin rectangles. Add it into the bowl. Take it out in 10-15 minutes
Chop up cabbage into ribbions celeries into slivers, and carrots/celery into pieces
Put a wok on medium/low heat and add oil. Add in onions, carrots, celery, and garlic, cover with a pot lid, and steam for 6 minutes.
Take out contents. Turn heat up to medium.
Add Spam to wok. Cook for about 4 minutes
Flip Spam. Cook for another 3 minutes
Take out Spam. Add rice to wok
Crack eggs into wok. Add in leftover marinade. Mix vigoriously
Once eggs are fully cooked, add in vegetables and spam. Mix again
